This premium cut is sourced from our selected lambs, all under six months of age, born and raised in the heart of the Dehesa of the Valley of Los Pedroches, in southern Spain. This singular Mediterranean ecosystem, defined by its holm oaks and open pastures, offers the perfect conditions for free-range, sustainable livestock farming. Our lambs are nourished exclusively on natural grains, native pasture, and forage from the dehesa, resulting in exceptional flavor and quality. COVAP is a vertically integrated Livestock Farmers Cooperative, ensuring full traceability, the highest standards of animal welfare, and a deep commitment to preserving tradition and environmental stewardship.
PRODUCT DESCRIPTION The lamb short loin is a premium, exceptionally tender cut taken from the rear portion of the loin, located between the rib section and the leg. This no-rib presentation includes both the tenderloin and the striploin, joined by a section of the spine bone, which gives rise to bone-in chops reminiscent of the classic T-bone. It can be prepared whole as an impressive roast or expertly portioned into elegant, individual chops. With its delicate texture and subtly sweet, mildly gamey flavor, the lamb short loin is ideal for everything from simple seasoning to more elaborate marinades and spice rubs, offering both versatility and refined appeal for high-end culinary applications.
