This premium cut is sourced from our selected lambs, all under six months of age, born and raised in the heart of the Dehesa of the Valley of Los Pedroches, in southern Spain. This singular Mediterranean ecosystem, defined by its holm oaks and open pastures, offers the perfect conditions for free-range, sustainable livestock farming. Our lambs are nourished exclusively on natural grains, native pasture, and forage from the dehesa, resulting in exceptional flavor and quality. COVAP is a vertically integrated Livestock Farmers Cooperative, ensuring full traceability, the highest standards of animal welfare, and a deep commitment to preserving tradition and environmental stewardship.
PRODUCT DESCRIPTION This premium cut features the rib bones with the loin meat attached—traditionally presented as a French Rack, a technique in which the bones are carefully trimmed and exposed for a clean, elegant appearance. Each pack includes two French racks, typically comprising 13 ribs each, joined together for a striking visual presentation.
