Albacore tuna (Thunnus alalunga) is the name given to albacore tuna fished in the Cantabrian Sea. Belonging to the tuna family, the white tuna is one of the highest quality varieties, since it is characterized by an exquisite flavor and a softer texture than the rest of its species. Fishing is carried out during the coastal season, from June to October, when the fish is at its optimum point to be caught and consumed.
