This premium cut is sourced from our selected lambs, all under six months of age, born and raised in the heart of the Dehesa of the Valley of Los Pedroches, in southern Spain. This singular Mediterranean ecosystem, defined by its holm oaks and open pastures, offers the perfect conditions for free-range, sustainable livestock farming. Our lambs are nourished exclusively on natural grains, native pasture, and forage from the dehesa, resulting in exceptional flavor and quality.
