Because of that, it cures much more quickly, it has also a bigger fat concentration that determines its sweeter and more aromatic flavor. Like Jamon Iberico, it is made from the best free range of Spanish native black pig specimens. Wildlife, a controlled diet and the way that the meat is cured in the mountain are the 3 factor that makes this type of Iberico so unique.
